CA: Advised PIC that procedures are needed for holding food on time as a public health control. 1. (CA) Advised the PIC that the floors and walls in the kitchen needed cleaning. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
