COS: PIC had all items re-washed and stacked to where they can air dry properly. Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Physical facilities installed, maintained, and clean — Inspector Note: Observed the main kitchen had aluminum foil on shelfing, the ventilation system and Cardboard used as a barrier to catch the spatter of grease. COS: PIC removed and discarded the foil and cardboard

Hands clean and properly washed — Inspector Note: Observed meal prep employee cutting raw chicken and failed to change wash his hands and change gloves when changing tasks to store away food. Same employee was also using his phone upon my entry of the kitchen. COS: upon pointing out the error the PIC requested the employee to wash his hands and change his gloves.

Proper eating, tasting, drinking, or tobacco use — Inspector Note: observed several opened water bottles through out the establishment (Frontline and WIC), I also observed an employee at the register drinking from a cup without a lid and straw attached. COS: PIC discarded the water bottles and employee added a straw and lid to his cup.

CA: PIC was advised to clean and sanitize the unit and to discard the ice. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
