Gauges of hot water dish machine broken and no hot water measuring device available. Advised PIC to acquire test strips and gauge to accurately observe concentrations.
Certified Food Protection Manager — Inspector Note: At the time of the inspection, no CFSM present. Advised PIC she has 60 days to certify a person in charge of kitchen in food safety.
Management knowledge, responsibilities, reporting — Inspector Note: PIC could not provide employee health agreements at the time of the inspection. She was provided a copy and told to review and sign with all kitchen staff.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed hand sink at bar without soap and paper towel, and hand sink next to entry way of kitchen lacking paper towel. PIC corrected, and made aware to keep stocked at all times.
