Wiping cloths: properly used and stored — Inspector Note: Observed failure to store wiping clothes in a solution of sanitizer between use 511-6-1.04(4)(m) - Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation. 1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be: (i) Maintained dry; and (ii) Used for no other purpose. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. 3. Cloths in-use for wiping surfaces in contact with raw animal foods shall be kept separate from cloths used for other purposes. 4. Dry wiping cloths and the chemical sanitizing solutions in which wet wiping cloths are held between uses shall be free of food debris and visible soil. 5. In manual warewashing operations, a temperature measuring device shall be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. Pf 2. Food stored covered — Inspector Note: Observed tomatoe sauce stored in the reach in cooler was not covered they get everything ready when they know it's that time for the health inspection...Right I'm for that the worker are working in horrible temperature inside and they are not allowed to go out of the store until there shift is over. They're are also all types of holes in the walls...There is mold that you can't see that they painted over...The ice machine is filled with water from ice that melted for days now...Its sold ice cream machine that was outside but now back inside where the food is...If you look underneath the sandwich...the mold is so thick under there,they should not be serving food to anyone...I have not seen anyone in there wash they're hands correctly since I been here and I came from a franchise Checkers....The District Manager is aware of this because they just had another one of his location had this problem recently.The flies are everywhere and they sometimes fly on the grill and the drink machine..They definitely need a re-do because the current score they have not is accurate at all..Thanks Have a Great Day C.A.; PIC told to toss it in the thrash because it might have been contaminated
