In-use utensils: properly stored — Inspector Note: Observed several hot water baths below 135 F. PIC replaced the water baths.
Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: observed several metal pans that were wet while being stacked. PIC will ensure that all dishes are air dried before stacking.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black mold like substance on the baffle of the ice machine. PIC will discard all the ice then ensure that the machine is cleaned and sanitized.
Compliance with variance, specialized process and HACCP plan — Inspector Note: Observed chicken being Sous vide near the meat prep sink in the kitchen. PIC stopped the process and discarded the chicken.
