CA: PIC was advised to have the pest control company service the area and to clean at a higher frequency to reduce the presence of gnats
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed sanitizer bucket without any sanitizer solution in it when it was tested. COS: PIC remade the sanitizer bucket.
Personal cleanliness — Inspector Note: observed an employee with long hair in the front food service area failing to have a hair restraints (Hat, hair net, or a hair tie and pulled away from the face) COS: Employee put on a hat Hair Restraints. 1. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
Personal cleanliness — Inspector Note: observed and employee attempting to prep food for customer with a bandaged hand and no gloves. COS: Employee was stopped by EHS and was instructed to place a glove on his hand before he prep food.
Personal cleanliness — Inspector Note: observed employee in the front food service area prepping food with a string wrist brand on and neckless. COS: the manager instructed the employee to remove the jewelry.
PIC present, demonstrates knowledge, performs duties — Inspector Note: Observed the PIC failed to demonstrate of Knowledge. Based on the risk of foodborne illness inherent to the food service operation, during inspections and upon request, the person in charge shall demonstrate to the Health Authority knowledge of foodborne disease prevention, application of the Hazard Analysis Critical Control Point principles, and the requirements of this Chapter. CA: The person in charge shall demonstrate this knowledge in one of the following ways (c) Correct Answers to Food Safety Questions. Responding correctly to the inspector's questions as they relate to the specific food operation.
Hands clean and properly washed — Inspector Note: observed employee in the front food service area scratching head and failed to wash hands after scratching. CA: When to Wash. 1. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles P and: (i) After touching bare human body parts other than clean hands and clean, exposed arms;
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed the handwashing sink being used as storage for Sanitizer bucket, brushes and other items. COS: Removed all items stored in the front food service handwashing sink. Using a Handwashing Sink. 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf 2. A handwashing facility may not be used for purposes other than handwashing.
