Item 14C Good Retail Practice

Single-use/single-service articles: properly stored, used — Inspector Note: Observed boxes of single-service items stored on the floor of the mobile unit. Corrective action - PIC advised that shelving below cooking equipment will be used for single-service item storage. Equipment, Utensils, Linens, and Single-Service and Single-Use Articles. 1. Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (i) In a clean, dry location; (ii) Where they are not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 centimeters) above the floor. 3. Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.

Item 16A Good Retail Practice

Hot and cold water available; adequate pressure — Inspector Note: Observed no hot water available at hand washing sinks and 3-compartment sink in mobile unit. Corrective action - PIC contacted repair person to service plumbing at mobile unit. PIC advised permit cannot be issued until inspector returns to perform a follow-up inspection that determine the hot water is functioning properly. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment.

Item 16B Good Retail Practice

Plumbing installed; proper backflow devices — Inspector Note: Observed leaks under holding tank of mobile unit with water discharging to the ground surface. Corrective action - PIC advised permit cannot be issued until repair is complete and inspector returns to verify that leak has been repaired as inspector unable to determine if clean or waste water being discharged to ground surface beneath the truck. System Maintained in Good Repair. A plumbing system shall be repaired according to law; and maintained in good repair.
