Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed chicken and shrimp was being cooled in deep containers. PIC will use different methods for cooling including shallow pans to properly cool TCS foods. 511-6-1.04(6)(e) - Cooling Methods (Pf, C) (e) Cooling Methods. 1. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; Pf (ii) Separating the food into smaller or thinner portions; Pf (iii) Using rapid cooling equipment; Pf (iv) Stirring the food in a container placed in an ice water bath; Pf (v) Using containers that facilitate heat transfer; Pf (vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. Pf 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed dishes not being properly washed in the three compartment sink. Staff member was washing and rinsing only. PIC advised that the sink must be set up properly to wash, rinse, and sanitize dishes. PIC is using bleach to sanitize dishes. PIC and staff trained on measuring sanitizer with test strips. Once corrected, the sanitizer was observed at 100 ppm.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employees jacket and purse stored in the kitchen on the shelf for the clean dishes and on top of a box of potatoes. Advised PIC to make sure that all employees items are stored in a designated area (COS). 511-6-1.07(4)(b) - Designated Areas for Employee Activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (C) (b) Designated Areas for Employee Activity. 1. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. 2. Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.

Toxic substances properly identified, stored, used — Inspector Note: Observed a sanitizer bucket at 200 PPM chlorine. The chemical solution is too toxic. PIC remade the solution to 50-100 PPM chlorine (COS). 511-6-1.07(6)(g) - Chemical Sanitizers, Criteria (P) (g) Chemical Sanitizers, Criteria. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P, or 2. Meet the requirements as specified in 40 CFR 180.2020 Pesticide Chemicals Not Requiring a Tolerance or Exemption from Tolerance-Non-food determinations.
