Management knowledge, responsibilities, reporting — Inspector Note: Manager was unable to provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. Employee was advised to discontinue use of the handwashing sink to rinse items. Manager was advised to burn the ice and clean and properly sanitize interior elements of ice machine. Also observed employee rinsing tea pitcher in handwashing sink. Thermometers provided and accurate — Inspector Note: Observed no thermometer was provided in the sandwich make table. A thermometer must be provided in the warmest part of the cooler. PIC will install by 11/22/25.

Item 12C Good Retail Practice

Wiping cloths: properly used and stored — Inspector Note: Observed quat sanitizer at 0ppm in the red sanitizer bucket below the food preparation area. Quat sanitizer was remade and observed at 200 ppm. Quat sanitizer must be maintained at 200-400 ppm.

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed plates not inverted on the serving/preparation line. All plates and bowls must be inverted to prevent contamination.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed clean dishes stored on the floor in a raw chicken box. PIC advised that dishes must be stored 6 inches above the floor. Raw chicken boxes cannot be used for clean dish storage. Also observed hair and build up on plates stored below the steam table.
