Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed prep top cooler door missing. Replace door to help food to maintain temperatures of 41F or below. Reach in cooler door gasket needs to be repaired (currently held up by tape). Observed cardboard boxes used as shelf liners. Please discard all cardboard items used as shelf liners and purchase shelf liners that are cleanable. Please send an email to [REDACTED EMAIL] of the repairs for the reach in cooler gasket and the prep top cooler doors no later than December 1, 2025.
Nonfood-contact surfaces clean — Inspector Note: Observed shelves throughout the main kitchen and walk in cooler are in need of deep cleaning due to grease and food debris build up. Reach in cooler exterior surfaces need cleaning due to mold like substance build up. Please have these surfaces cleaned and photos sent to [REDACTED EMAIL] no later than December 1, 2025.
Physical facilities installed, maintained, and clean — Inspector Note: Observed walls, ceiling tiles, and air vents with excessive dust accumulation throughout the entire kitchen and employee restroom. Walls around the 3 compartment sink were observed to have black build up along with the floor drain grate underneath the 3 compartment sink. Please have all walls, ceilings, and vents deep cleaned and send photos to [REDACTED EMAIL] no later than December 1, 2025.
Food stored covered — Inspector Note: Observed pepperoni and cheese strings in the walk in cooler left uncovered. Observed pizzas stored next the prep top cooler with no overhead protection.
Proper cold holding temperatures — Inspector Note: Multiple TCS food items in the prep top cooler and connected reach in cooler were cold held above 41F. Please have prep top cooling unit repaired to help maintain food temperatures of 41F or below. Keep items in the top portion on ice and remove all food items from the bottom reach in cooler until unit has been repaired and an invoice has been sent to [REDACTED EMAIL].
