2 recorded inspectionsContamination prevented during food preparation, storage, display — Inspector Note: Observed the bottom of the sweet and sour chicken pan stored directly on top of uncovered teriyaki chicken in the front standing reach in cooler. Observed food sitting on the countertop completely uncovered upon first observations. Observed several cooked chicken food items stored in the front reach in cooler stored uncovered upon and team member hastily placing lids on the containers as I approached the front food service station.
Personal cleanliness — Inspector Note: Observed cook and manager in the chicken preparing food without any hair restraints.
Personal cleanliness — Inspector Note: Observed manager in the kitchen with wearing a bracelet on her wrist.
In-use utensils: properly stored — Inspector Note: Observed rice scoop stored in water of 106F. Manager was advised to keep in-use utensils on a clean surface or in hot water of 135F or above in between use.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed wok skillet with two large, chipped pieces missing and a large bowl used to prepare large batches of raw chicken with 4 large cracks on the edge. Manager was advised to discard and replace the wok skillet.
Nonfood-contact surfaces clean — Inspector Note: Observed mold like substance on the frame of the lower reach in cooler on the cook line.
Physical facilities installed, maintained, and clean — Inspector Note: Observed walk in freezer with wet spots and stains coming from raw chicken that's stored in the freezer.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee single use coffee cup with a lid and straw stored directly next to yum yum suace that were actively being prepared. Manager was advised to place personal beverages in a designated area away from food storage and food prep. Observed personal medications, phone, and water bottle stored in between the rice cooker and single use to go containers by the front food service area.
Insects, rodents, and animals not present — Inspector Note: Observed gaps on the top and bottom of the back screen door. Manager was advised to install a door sweep and to close the gap at the top of the screen door to prevent pest entry.
Proper cold holding temperatures — Inspector Note: Observed food items in the standing reach in cooler cold held above 41F. These items were observed previously stored on the counter and uncovered. Upon team member realizing it was time for an inspection, they hastily tried to place food items back into the cooler. Items were discarded.
Proper date marking and disposition — Inspector Note: Observed several food items in the walk in cooler without date marking information.
Compliance with Georgia Smoke Free Air Act — Inspector Note: Observed employee smoking a cigarette in the dry storage area of the kitchen. Employee was advised that they are not allowed to smoke in the kitchen. Employee proceeded to go outside of the establishment to discard cigarette. Manager was advised to place a no smoking sign in the kitchen.
Food stored covered — Inspector Note: Observed lo mien and broccoli stored uncovered on the counter next to the prep top cooler. PIC corrected on site.
Proper cold holding temperatures — Inspector Note: Observed food in the standing reach in cooler in front of the fryers cold held above 41F. The reach in cooler was observed not holding proper temperatures to keep items cold. Items that were in no more the 2F above 41F were able to be transferred to another cooler. Items exceeding 2F were discarded. Manager was advised to have the reach in cooler repaired.
Proper hot holding temperatures — Inspector Note: Observed pepper chicken and fried chicken wings hot held below 135F. Manager was advised to reheat the items to 165F.
Toxic substances properly identified, stored, used — Inspector Note: Observed chlorine sanitizer solution above 200ppm, exceeding the maximum concentration, making it too toxic. Manager remade the solution to 50ppm.
